Since Passbolt is open-source , I wanted to know if I could install and configure the LDAP plugin by myself and skip the Passbolt Pro license!

Technically you can do it, but we won’t help you 
If it’s a budget issue, it’s always best to get in touch with sales@passbolt.com, I’m sure they can make a deal that would be more worth your while than monkey patching every release to remove the subscription checks.
